Day 15 of lockdown 2.0 Cooking a Veggie Lentil Chilli

The weather is pretty miserable, so we decided to make a vegetarian dish for the family.

Ingredients: 1 big squirt of garlic puree or 3 garlic gloves, 2 carrots peeled, 1 pepper, 600ml of vegetable stock,1 tin of tomatoes, 1 tin of kidney beans, 1 tin of black beans, 1 tin of lentils, 1 cup of couscous, 1 tbsp of curry powder, 1 tbsp of tomato puree, 1 tbsp of paprika and salt&pepper.

Add 600ml of hot water to the vegetable stock and add to a saucepan. Add the sliced pepper and the peeled, diced carrots to the saucepan and let it simmer. Add all the other ingredients (couscous, beans, lentils etc.) followed by the spices. Let it simmer and ready within 15 minutes.
Great tasty, veggie dish!!
We had afters some fresh melon and some clementine for dessert. Give it a go! Delicious!!
