CRUNCHY BEET, GOAT CHEESE & QUINOA SALAD WITH LEMON-DIJON-PAPRIKA DRESSING!

Salad:
2 cups cooked quinoa
1 cup finely chopped English cucumber
8 oz cooked beets (I used @lovebeets)
1 cup chopped steamed green beans (I used frozen)
1/2 cup chopped parsley
1/2 cup crumbled goat cheese
3 tbsp roasted pumpkin seeds

Dressing:
3 tbsp olive oil
1 tbsp maple syrup
2 tsp Dijon mustard
1/2 tsp salt
1/4 tsp paprika
1 minced clove garlic
1/2 tsp lemon zest
Juice of 1/2 lemon

Toppings:
Fresh cracked pepper

1️⃣Make the dressing. Add the olive oil, maple syrup, mustard, salt, paprika, garlic, lemon zest and lemon juice to a small bowl. Whisk to combine and set aside.2️⃣Make the salad. Add the quinoa, beets, cucumber, green beans, parsley, goat cheese and pumpkin seeds to a large bowl. Add the dressing and toss to combine. 3️⃣Add fresh cracked pepper and serve.
