Get out your 6 quart slow cooker or Instant Pot!
1 Pound Ground Beef (fat content of your choice).
1 Pound Italian Sausage (Mild or Hot)
1 Medium Yellow Onion (Chopped)
2 Red Bell Peppers (Chopped)
3 Cloves Garlic (Minced)
30 oz Can Kidney Beans (Drained and Rinsed)
15 oz Can Black Beans (Drained and Rinsed)
15 oz Can Pinto Beans (Drained and Rinsed)
29 oz Can Diced Tomatoes (Keep the juice)
3 oz Tomato Paste
2 Tbsp Worcestershire Sauce
1 Cup Beef Broth
1 Tsp Hot Sauce (Use your favorite hot sauce, also optional if you don’t like spicy food)
2 Tbsp Chili Powder (optional if you don’t like spicy food)
1 Tsp Ground Cumin
1 Tsp Paprika (you can use smoked paprika also)
1/4 Tsp Powdered Cayenne Pepper (optional if you don’t like spicy food)
1/2 Tsp Salt (More or Less if you like)
1/2 Tsp Fresh Cracked Black Peppercorns (More or Less if you like)
1 Tbsp Sugar (Brown Sugar is good also)
1 Cup Tomato Sauce
2 Cups Sweet Corn (optional)
Instructions:
Brown the ground beef and italian sausage in a medium saucepan (a little pink is ok, it will cook in the slow cooker).
Drain grease and add beef/sausage combo to your cooker.
Sautee the onions, bell peppers and garlic in an iron skillet. Once onions have become translucent (or a beautiful golden-ish color) you may add it to your slow cooker.
Add your beans.
Add the tomatoes, tomato paste, worcestershire sauce, beef broth, OPTIONAL CORN and hot sauce.
Then you may add your seasonings, adjusting ANY quantities that you desire. If you like milder chili, leave out cayenne pepper/chili powder/hot sauce. If you like it hotter…go nuts and add more. It’s YOUR chili!!! š
Pour the tomato sauce over the top as the last ingredient added.
Stir to combine all ingredients, set the slow cooker to MEDIUM for 6-8 hours.
During this time, you can get stuff done around the house, or relax by the cozy warm fire while your house is filled with the amazing aromas of this chili!
Top with shredded cheese, sour cream and chives. Serve it up with some tortilla chips or oyster crackers and ENJOY!! I know you and the family will LOVE this recipe!
