CRISPY FRIED BEER-BATTERED ONION RINGS

2 medium onions (about 12 ounces) cut into 1/2-inch thick rounds and separated into individuals rings

1 cup flour, extra flour to toss onion ring in…before dipping in batter

3/4 cup cornstarch

1 teaspoon baking powder

1 teaspoon paprika

1/2 teaspoon kosher salt

1/4 teaspoon fresh cracked black pepper

1 bottle (12 ounces) beer, refrigerated until cold

3 cups vegetable oil

1. In a large mixing bowl…whisk flour, cornstarch, baking powder, salt, paprika and black pepper. Slowly whisk in beer until completely smooth.

2. Add oil into a 3 quart Dutch oven or heavy bottom pan over medium heat (heat oil about 4-7 minutes).

3. Using a plastic or paper bag…toss onion rings in extra flour, about 1/2 cup

4. Add one third of flour coated onion rings in beer batter and mix gently to coat.

5. With skewer or fork remove each onion ring, one at a time, shaking off extra batter. Add to hot oil. Fry 2 minutes on each side, turning only once.

6. Transfer fried onion ring to paper towels and sprinkle on salt, if desired.

7. Serve immediately or keep warm in a 200 degrees F oven for up to 30 minutes.
