Creamy pesto chicken pasta is one of my favorite pasta dishes, especially because of the homemade pesto. It’s quick and easy! Perfect for a weeknight meal & a great option for kids too!
Ingredients:
-Pesto-
1. A large bunch of FRESH basil leaves
2. 4 cloves of garlic
3. Grated Romano cheese (to your liking)
4. Pine nuts
5. Extra virgin olive oil
-Chicken-
1. 1.5 – 2lbs of chicken breast CUBED
2. Salt & Pepper to taste
3. 1/2 TBS Garlic Powder
4. 1 tsp of Paprika
5. 1/3 cup of white wine
6. Drizzle a small amount of olive oil to coat the chicken
-Pasta/Sauce-
1. Pappardelle pasta
2. 1 pt. of heavy cream
3. Approximately 1/3 cup fresh pesto
4. 3 TBS of Butter
5. Cooked chicken
6. Salt & Pepper (to taste)
7. Freshly grated Romano cheese
