Creamy Paprika Shrimp
Ingredients
* 1 lb. peeled and deveined raw shrimp
* 1 tsp salt
* 1 tsp. cracked black pepper
* 3 Tbsp. extra-virgin olive oil
* 1 large shallot or red onion finely chopped (about ½ cup)
* ½ cup finely chopped red bell pepper
* 4 garlic cloves, minced
* 2 Tbsp. tomato paste
* 1 teaspoon crushed red pepper flakes
* 1-2 teaspoon chili flakes for sauce
* 3 cup vegetable or chicken broth
* 1 teaspoon paprika for seasoning shrimp
* 1 tablespoon paprika for sauce
* 2 handfuls fresh baby spinach
* 1 cup heavy cream
* 1 Tbsp. fresh lemon juice (from 1 lemon)
* 2 Tbsp. chopped fresh parlsey leaves
For serving
Cooked orzo or rice, or crusty bread for dipping
1. Pat dry shrimp and season with salt, black pepper, chili flakes.
2. Add oil to a pan or skillet and add in seasoned shrimp.
3. Cook undisturbed one minute and flip.
Total cook time should not exceed 3-4 minutes or shrimp will be dry and rubbery.
1. Remove shrimp and set aside.
2. In the same pan add shallots, red peppers cook for one minute and then add in the garlic. Cook another 30 seconds to a minute until soft.
3. Add chili flakes and the tomato paste and cook about a minute while stirring on medium heat.
4. Slowly add broth while stirring.
5. Add paprika.
1. Add spinach. Once spinach is wilted add in the cream and keep stirring to incorporate.
Add lemon juice. Adjust salt and pepper. (broth has salt so taste before adding)
1. Cook until sauce is thick and red in color.
2. Add in shrimp and garnish with parsley.
3. Serve over rice, orzo, pasta or breading for dipping!
