Ingredients
For the chicken:
2 chicken breasts
2 tbsp olive oil
1 tsp tomato paste
½ tsp salt
½ tsp black pepper
1 tsp garlic powder
½ tsp dried mixed herbs
1 tsp paprika
½ tsp cayenne pepper (optional)
For the sauce:
2 tbsp butter
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp dried mixed herbs
1 tsp paprika
½ tsp cayenne pepper (optional)
100ml double cream
2 tbsp grated parmesan
Small handful of chopped chives (to finish)
Method
In a bowl, mix the chicken with olive oil, tomato paste, and all the seasonings. Heat a pan over medium-low heat and cook the chicken for 5–6 minutes on each side, until golden and cooked through. Remove and set aside.
In the same pan, melt the butter. Add the seasonings and let them sizzle for 30 seconds. Pour in the double cream, stir well, and simmer for a minute. Add parmesan and stir until melted and creamy.
Place your chicken on a pile of mashed potatoes, pour the creamy sauce over the top, and finish with a sprinkle of fresh chives
