Creamy Cucumber Salad
2 English Cucumbers (sliced into thin disks and then sliced in half, making half moon shapes)
1 Shallot (sliced into thin rings and then sliced in half, making half moon shapes)
2 Tablespoons Fresh Dill (finely chopped)
1/2 Cup Sour Cream
1 Tablespoon Honey
1 Tablespoon Lemon Juice
1/2 Teaspoon Salt
1 Teaspoon Pepper
1/4 Teaspoon Paprika
Sweating the cucumbers
1 Teaspoon Salt (ratio = 1/2 Teaspoon Salt per Cucumber)
Directions
Wash and slice your cucumbers into thin slices, then cut the slices in half (making half moon shapes) Toss the sliced cucumbers in a bowl with 1 teaspoon of salt. Cover and let chill in the refrigerator for a half hour up to one hour. Drain off the liquid or spin the cucumbers in a salad spinner. Place the cucumbers back in the bowl.
In a medium sized bowl mix together the remaining ingredients. Mix or whisk the dressing and then mix together with the cucumbers. Cover and let chill for a minimum of two hours. Serve soon after. If you’re preparing the salad ahead of time keep the dressing separate and mix together when you’re ready to serve. Enjoy!
