– Pasta of choice for 4
1. Boil according to package
Sauce
– 1 cup soaked cashew nuts
– 1 cup water
– 2 tbsp lemon juice
– 2 tbsp nutritional yeast
– 1 tbsp dried basil
– 2 tsp smoked paprika powder
– 1 tsp sea salt
– 1 tsp black pepper, ground
2. Boil cashew nuts for 5 minutes, then mix all ingredients in a high speed blender until smooth and creamy
Other:
– 2 onions
– 200-400g cherry tomatoes
– 2 handfulls fresh spinach
3. Sauté on medium heat until onion is soft. Then add the sauce, heat on medium heat, add the pasta and combine
4. Serve!
