Hello there, today I am going to show you how to prepare homemade cream soup from potatoes and leeks plus baked croutons with fresh herbs. Easy to make and packed full of flavour. This soup really has to be served with croutons plus some sprinkled leaves from the rosemary and a touch of paprika for that extra freshness!
Ingredients for the soup:
– 3 whole leeks
– 300 grams of potatoes
– 500 grams of vegetable stock
– 50 grams of olive oil
– 1 tbsp. paprika
– Salt and white pepper to taste
Ingredients for the vegetable stock:
– 1-2 onions
– 2-3 carrots
– 3-4 celery stalks
– 4-5 sprigs fresh thyme
– 1 bay leaf
– 1 small bunch fresh parsley
– 1 teaspoon black peppercorns
–Optional: leeks (especially the green parts), fennel, tomatoes, mushrooms, mushroom stems, parsnips
Ingredients for the croutons:
– 3-4 slices of bread โ any kind, preferably homemade
– the leaves from 4-5 sprigs fresh thyme
– the leaves from 4-5 sprigs of fresh rosemary
– Oregano โ you can use dry, but if you have.
– salt, olive oil and white pepper to taste
