Cracking Pork with Spiced Apple Sauce
Ingredients for Pork
– Pork (belly or joint)
– 1tbs Smoked Paprika
– 2 tbs Ginger Powder (or less)
– 1tbs Garlic granules
– 1tsp Cinnamon
– 1tsp Mixed Spice
– 1tbs Rock Sea Salt
– 2tbs Vegetable Oil
– 1tbs Mixed Herbs
– Fresh Thyme
– 2 Bay leaves
-1 cup of apple cider vinegar
– 1 bulb onion
– 1 bulb of garlic
Ingredients for Sauce
– 6 medium Sweet / Bramley Apples
– 1/4 portion of red chilli finger
-1/4 portion of small onion
– 1/2 clove of garlic
-a pinch of ginger
-1/2 tsp cinnamon
– 1/2 cup of water
– 1tbsp of butter
To make the Pork,
– pat dry pork
– make deep incisions/ scores on the skin through to the meat(this makes the pork crackling)
– in a bowl, mix oil, smoked paprika,ginger granules, cinnamon, mixed herbs, mixed spice.
– Brush and massage all over pork
– add thyme and bay leaves
-sprinkle salt over pork especially skin
– put into pork in foil and keep in fridge for at least 2 hours
– place pork on a rack in a large pan.
– pour apple cider vinegar into pan
– cut onion and garlic and place in pan
– Roast in oven at 200C / 6 gas mark for first 20 mins
– turn oven heat down to 170C /4gas mark and continue roasting for 1hours 30mins (The rule to roasting pork is for every 500grams pork, you need to allow it cook between 25-30 mins on top of the first (20mins at 200C) so please check the weight of pork you are using)
– bring roasted pork out of oven and allow to cool on a rack.
To make Spiced Apple Sauce:
– peel, core and chop all of the apples into small cubes.
– chop small portion of chilli,garlic,ginger and onions and add to saucepan.
– add water and put on low heat until all ingredients are cooked and mashy.
– remove from heat, add butter and mash with masher, hand blender or food processor.
– Serve with roasted pork
