Cous Cous Salad Bowl- by Chef Girija

A 12 minute, no cook, giant Couscous Salad with mixed veggies , smoked Paprika chickpeas , tandoori chicken mustard microgreens and rocket (arugula). Sounds yum doesn’t it ?

– People who do not like to turn on the ovens πŸ™‚
– People who like anything-you-have-on-hand recipes πŸ™‚

This salad is tastefully, texturally, and colorfully busy, which is just the most fun thing right now when all of our produce is so fresh and juicy and crisp.

I think I’ve made it at least two times in this week.

Ingredients
1/3 cup dry cous cous
1 tsp oil
1/2 cup Hot stock
1 tsp butter

Toppings
Panfried smoked chickpeas
Cucumber
Tomatoes
Iceburg + rocket leaves
Mustard microgreens
Tomatoes/ sundried tomatoes
Tandoori chicken ( left over )

Dressing
1 tbsp Olive oil
1 tsp Lemon juice
Salt + pepper to taste

Method :
In a glass bowl , add dry cous cous + hot stock + 1 tsp oil . Stir . Cover and let it sit for 10 mins. Open add butter and stir again.
Meanwhile add paprika and salt to cooked chickpeas . Panfry in 1 tsp oil . Keep aside
I had one chicken drumstick marinated in tandoori masala. Grilled it to perfection.
Chop your choice of veggies , I used cucumber , tomatoes , iceburg, rocket and microgreens .
A simple dressing – olive oil + lemon juice + salt and pepper to taste .
