Did you ever wish you could drink just water but still get 10x more benefits? If yes, your wish has come true. Almost. I am talking about courgettes.

Courgette is a low-starch fruit. Which means it is low in carbohydrates and high in fiber. Which means it will fill you up and discourage overeating .
That’s precisely what most people looking to lose weight want, right?

These guilt-free, low carb courgette noodles are so fun, quick and easy to make you will want to keep making them over and over again.

You may not have thought about courgettes as superfoods, but they are super!
They are nutrient-dense, which means they contain a wealth of essential nutrients whilst also being low in fat and sugar.

Courgettes contain a variety of vitamins, antioxidants, minerals and beneficial plant compounds.
They are rich in the water and fibre yet low in calories, all of which may help reduce hunger and help you feel full – potentially leading to weight loss over time.

You can eat them raw or lightly fry in some olive oil with lots of garlic and your favourite spices.
They don’t take long to make even if you decide to quickly fry them.

Today I would love to share with you one of my favourite recipes – courgette noodles!

To make courgette noodles with a Spiraliser you would need to cut off the ends of your courgettes, I would also recommend cutting your courgettes in a half to avoid very long noodles.
Be sure to spiralise your courgettes raw, before cooking. Best not to peel them as they end up very mashy if peeled.

For this recipe I have used two large courgettes. And few simple ingredients:

1 can plum tomatoes
few fresh tomatoes
2-3 garlic cloves
handful fresh basil
1/4 tsp salt
1/2 tsp paprika
1/2 tsp ground turmeric
1 tsp apple cider vinegar

Top up with your favourite nuts, seeds and chilli flakes.
