My family really enjoys this country skillet omelet filled with sharp cheddar cheese and fresh garden vegetables for a healthy breakfast. It is easy to make and a perfect compliment to the blueberry muffins video. Use fresh organic eggs from your preparedness chickens raised in your back yards. Use fresh vegetables and herbs from your Square Foot Gardens. You can also add bacon or ham dices to this country skillet omelet for additional flavor. Increase the amount of ingredients to fit your particular family size or number of servings. Be sure to use a bigger skillet than the 8″ used in the video.
1 large — organic russet potato
½ teaspoon — Kosher salt
1 teaspoon — Indian Black Tellicherry Peppercorns
4 ounces – sharp cheddar cheese (approximate)
¼ cup — diced organic onion (approximate)
2 tablespoons — diced organic fresh green bell pepper (approximate)
1 large — organic Metechi garlic clove
3 tablespoons — unsalted butter
1/4 teaspoon — Extra-virgin olive oil
4 large — organic eggs
2 tablespoons — organic milk
1 teaspoons — fresh parsley or dehydrated
¼ teaspoon –Hungarian paprika
