This is one of my old favorites. I learned this one in my cooking classes in Blue jay Cafe at Southfield high school many moons ago. I think if you like to try different things this recipe has a great twist. If you want to cook the hen without the glaze just add a little more seasoning on the outside of the hen. Paprika and Montreal steak seasoning or seasoning salt and paprika in addition to what I gave. I tuned this recipe to my liking. You can add or subtract to your liking. Cornish hen seasoning the first side is individual hen and after is for 5 if you are making 6 add both together. Or per hen double or so the single hen recipe.
Single. Cornish hen. 5 hens
1/8 tsp. Smoked Paprika 1/2 tsp
1/4 tsp. Garlic powder. 2 tsp
1/8 tsp. Ground poultry season. 1/2 tsp
1/8 tsp Ground sage. 1/2 tsp
1/4 tsp. Onion powder. 1/2 tsp
1/4 tsp. Montreal steak season. 1 Tbs
1 Tbs. Butter room temp. 5 Tbs
Mix the seasoning in with the butter and lift the breast skin up and rub on and the outside of the hen. *After use the seasoning below to you taste or liking.
Seasoning salt, paprika, Montreal steak seasoning on the out side of the hens front and back. ***Do not over season it will take away from the sweet hint of orange 🍊.
Marmalade glaze
2 tbsp per hen Smuckers orange marmalade
1 tsp sugar
2 tbsp of broth from hens
