TEXT RECIPE:
Ingredients:

1-2 Onions
3 ribs celery
1 green bell pepper
1-2 bay leaves

6 carrots
3 parsnips
2 sweet potatoes

1 rump roast (3-4lb)
1 can crushed tomatoes
smoked paprika (2 tbs OR more)
caraway seeds (ground or whole) 2 tbs (or more)
salt and pepper

1. Saute onions, peppers, and celery with paprika and caraway in stock pot
2. Roast carrots, parsnips, and sweet potatoes at 425 until soft
3. Clean beef by removing any excess fat. Cube into 1 inch cubes, season, then lightly sear. Add seared cubes to the stock pot
4. Deglaze with large can of tomatoes plus water (2 cups). Add bay leaf.
5. Add roasted vegetables and cover pot. simmer on low heat for an hour
6. Remove lid and continue to simmer for 2-5 hours (you may also choose to leave lid half on)
7. Once meat is tender to the touch and does not need a knife; you are done! ENJOY:)
