Welcome to Day 7 of my 25 Days of Christmas Recipes! 🎄✨ Today, we’re making Christmas Baked Chicken Thighs – a simple yet delicious dish that’s perfect for the holiday season. These juicy chicken thighs are seasoned with festive spices like paprika, garlic, and a hint of cinnamon for that warm holiday touch.

This recipe is quick, easy, and baked to crispy perfection in just 40 minutes. Whether you’re hosting a Christmas dinner or looking for a cozy family meal, these chicken thighs are sure to impress!

🍗 Ingredients:

6 bone-in, skin-on chicken thighs
2 tsp smoked paprika
1 tsp garlic powder
1 tsp black pepper
1 ½ tsp salt
1 tsp onion powder
1 tsp dried thyme
2 tbsp olive oil
1 tbsp honey (optional, for a hint of sweetness)
½ tsp ground cinnamon (for a subtle holiday touch)
½ tsp nutmeg (optional, for added warmth)
Fresh parsley (for garnish)

Instructions
Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet or roasting pan with foil or parchment paper for easy cleanup.

Prepare the Chicken: Pat the thighs dry with paper towels (this ensures crispy skin). Please place them in a large bowl.

Make the Spice Mix: In a small bowl, mix paprika, garlic powder, black pepper, salt, onion powder, dried thyme, cinnamon, and nutmeg.

Season the Chicken: Drizzle olive oil over the chicken thighs and rub it evenly. Sprinkle the spice mix over the chicken, ensuring every piece is well-coated. For an extra festive touch, brush a thin layer of honey over the skin for caramelization (optional).

Bake: Place the chicken thighs skin-side up on the prepared baking sheet. Bake for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.

Rest and Garnish: Remove the chicken from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley for a pop of color and serve.
