Ingredients for:
1) Chicken Tortilla Soup:
– Chicken Breast – 500 Grams
– Diced Onion – 1 Medium Head
– Diced Red Pepper – 1 Medium Head
– Minced Garlic – 6 Cloves
– Cayenne Pepper – 2 Tablespoons
– Paprika – 1 Tablespoon
– Cumin Powder – 1 Tablespoon
– Salt – ½ Teaspoon
– Olive Oil – 2 Tablespoons
– Chicken Stock – 4 Cups (~ 1 L)
– Tomato Sauce – 1 Cup
– Diced Tomato (Fire Roasted) – 1 Cup
– Black Beans – 1 Cup
– Sweet Corn – ½ Cup
– Fresh Coriander – ½ Cup
– Lime Juice – ¼ Cup
– Tortilla Bread – 5 Small Size
– Avocado – to taste
– Shredded Cheese (Monterey Jack & Cheddar) – to taste
– Sour Cream – to taste
Chicken Tortilla Soup preparation:
– Preheat olive oil in a saucepan
– Add the diced onion, red pepper, garlic, and let cook for two minutes.
– Add the cayenne pepper, paprika, cumin, salt, and chicken stock.
– Add the chicken to the saucepan. Cover and let cook for 20 minutes.
– Remove the chicken from the saucepan and shred into small size pieces.
– Return the chicken to the saucepan, add the tomato sauce, diced tomato, black beans, and sweet corn.
– Mix well to incorporate and let simmer for two minutes.
– Add the fresh parsley and lime juice.
– Serve the chicken on top of the rice, drizzle some BBQ sauce and sprinkle fresh parsley.
Tortilla Crisps preparation:
– Cut the tortilla bread into 1 cm strips and then cut in half.
– Preheat cooking oil and fry the tortilla until crispy and golden brown.
– Remove and let rest on a cooling rack.
