In this video I show how to make a creamy & tasty chicken tikka masala. This recipe takes around 30 minutes to cook and around 15 minutes to prepare, then marinate, made with fresh and dry warm spices. With blended fresh tomato puree then rounded of with coconut milk for a creamy texture, which produces a vibrant tikka colour finishing off with fresh coriander and a squeeze of lemon / lime.
Ingredients
For the marinade
750 grams of chicken (I used diced breast, but bone in is fine)
1 tsp of lemon juice
1 tsp chilli powder (I used Kashmiri for the vibrant colour)
1 tsp coriander powder
1 tsp garam masala powder
1 tsp ginger paste
1 tsp garlic paste
½ a cup of Greek yogurt / natural set
Cooking and sauce
2 tbsp of olive oil (veg oil is fine)
1 medium onion finely diced
1 tsp ginger paste
1 tsp garlic paste
2 tsp paprika
2 tsp garam masala powder
1 tsp coriander powder
1 tsp turmeric powder
1 tsp of salt (to taste)
1 tsp of sugar (to balance flavours)
200ml of tomato puree (I blended fresh tomatoes)
300ml canned coconut milk
handful of freshly chopped coriander
half a lemon or lime
Serve with boiled rice (I used Basmati)
