Chicken Stew
Ingredients For Chicken:
2 kilos Hard Chicken Thigh cut in pieces
1 medium size Onion Chopped
1 Teaspoon Chicken seasoning
1 Teaspoon Thyme
1 Teaspoon Curry powder
1 Teaspoon Ginger powder
1 Teaspoon Garlic powder
1 Teaspoon Oregano
1 Teaspoon Paprika
1 Teaspoon Rosemary
1 cup water
Salt to taste
Method:
In a clean pot add your Cut Chicken and all the spices stir and allow to cook till tender. Remove and set aside the meat stock. Fry the chicken till dry. set aside fried Chicken
Stew Ingredients:
15 Fresh Tomatoes
10 Shombo (Chili pepper
6 Tatashi ( Red Bell pepper
15 scotch Bonnet Pepper
1/2 cup Tomato paste
2 big Onion Chopped
3 cloves Garlic
1 Tablespoon grated Ginger
1 Tablespoon Thyme
1 Teaspoon Oregano leave
1 Teaspoon Curry Powder
1 Teaspoon Paprika
1 Teaspoon mixed spice
1 Tablespoon Knorr
salt to taste
Method:
Blend the tomatoes and all the pepper and cook for 10 minutes or allow the water to dry up.
In a clean pot add some of the oil used in frying Chicken allow to get hot. Add chopped Onion fry for 2 minutes.
Add Garlic, ginger, thyme, oregano, dry basil and fry for 3 minutes.
Add Tomato paste and fry for 5-10 minutes till dry.
Add cooked tomatoes and pepper cook for 5 minutes.
Add meat stock and fried meat. add Curry powder, salt to taste, paprika, mixed spice, Knorr cube cook for another 5-10 minutes until the oil floats on top. Check to see if to adjust seasoning.
Stew is ready!!!! serve with rice, yam or spaghetti
