The Self-Reliance Clubs exist to educate the next generation to understand that they are the champions of their own lives. Through their own initiative, ingenuity, and hard work, they will realize that they have the power to determine the direction of their future.
Self-Reliance Clubs are set up in schools to provide students with the opportunity to work in various entrepreneurship initiatives, learn economics, earn money, and gain self-esteem and a sense of individual freedom. The ‘money’ earned can then be used to purchase school supplies, equipment, and clothing.

CHICKEN & RICE CASSEROLE
Ingredients and Amounts:
4 cups diced cooked chicken
4 cups cooked rice
½ cup sliced almonds
1 small onion – chopped
1 x 10 oz. packet of peas
¾ cup diced celery
1 x 10¾ oz. can condensed cream of celery soup (undiluted)
1 x 10¾ oz. can condensed cream of chicken soup (undiluted)
1 cup mayonnaise
2 teaspoons lemon juice
1 teaspoon salt
2 cups crushed potato chips
Paprika to shake over the top of the casserole
Method:
1. Preheat oven to 350 °F.
2. In a large bowl, combine the rice, chicken, almonds, onion, peas and
celery.
3. In a smaller bowl or measuring jug, combine the cream of celery soup,
the cream of chicken soup, mayonnaise, lemon juice and salt.
4. Pour the contents of the smaller bowl over the contents in the larger
bowl.
5. Stir everything together.
6. When mixed together, pour entire mixture into an oven dish.
7. Sprinkle crushed potato chips over the top of the mixture.
8. Sprinkle paprika over the mixture.
9. Bake for 1 hour at 350 °F.
10. Serve hot.
