Easy chicken pasta salad recipe that is perfect for meal prep and a grab and go lunch. This will stay good and fresh for 4 days, and the flavors will only get better. Takes about 45 minutes to prepare, you’ll have4 days worth of lunch ready to go.
Ingredients:
30 grape tomatoes
1 green belll pepper
1 shallot
7 cloves garlic
2 sprigs fresh tarragon
2 -8 oz chicken breast
2 oz shredded parmesan cheese
6 oz bowtie pasta
3 lemons zested and juiced (1/2 c)
2 tbsp white distilled vinegar
1/2 c oil
6 slices bacon, crispy
Seasoned salt recipe:
1 c fine grain sea salt
2 tbsp each onion and garlic powder
3 tbsp each chili powder and paprika
1 tsp coriander
1/2 tsp toasted cumin
2 tsp black pepper
1/2 tsp dried thyme leaves, crushed
1/4 tsp cayenne pepper
1/4 tsp ground turmeric
1/2 tsp dried marjoram, crushed
