Chicken Parmesan/Parmigiana
INGREDIENTS:
* 1 Chicken breast sliced in half & hammered
* Salt to taste
* pepper (optional)
* 1 tbsp onion powder
* 1 tbsp paprika powder
* 1 tbsp garlic powder
* 1 tbsp parsley (optional)
* 1 pinch of red chilli flakes
* 1 egg whisked
* ½ cup All purpose flour
* 1/3 cup bread crumbs
* ¼ cup shredded parmesan cheese
* ¼ tsp italian mix herbs
* oil to fry
* 5 tbsp Marinara Sauce(ready made)
* 3-4 tbsp grated mozzarella cheese
METHOD:
Mix all the dry spices, onion powder, chilli flakes, salt, paprika & garlic powder well. Sprinkle & rub it on both sides of the thinly hammered chicken breast fillets. Keep it aside for 30 mins. To coat the fillets for frying mix bread crumbs , parmesan cheese & Italian herb mix together. Whisk the egg thoroughly. Take the breast fillet dust in all purpose flour, egg wash & the crumbs mix. You can fry or bake as per your choice. Apply marinara sauce on each chicken fillet and top it with grated mozzarella cheese plus a pinch of Italian herb mix. Broil for 3-5 min for the cheese to melt. ENJOY
