Chicken & Feta Burger | Homemade Healthy Burger

Feta Spinach burger
Ingredients:
500g chicken mince
2 tablespoons coriander leaves, chopped
Large handful of spinach leaves, chopped
1 clove garlic, chopped
1/2 small size red onion, chopped
2 tablespoons rolled oats
1/2 teaspoon smoked paprika powder
1/2 teaspoon dried oregano
Salt
1 cup diced feta
1 egg

Mix all the ingredients in a bowl and shape into round patty , approximately 100g each.
Refrigerate for 10 minutes to firm and hold shape.

Heat oil to medium heat in a heavy bottomed pan and grill the burgers until cooked.

Avocado cream :
1 heaped tablespoon creme fraiche
1/4 teaspoon white pepper powder
1/4 teaspoon dried oregano
Salt
1/2 avocado, chopped
Mix all the ingredients in a bowl

Assembly
On the bottom part of the toasted sesame spoon the avocado dip.
Top with baby gem lettuce, tomato slice, avocado sliced and chicken feta burger.
Finally red onion rings and tomato salsa and the last part of the bun.
Best served with oven toasted sweet potato fries.
