Enchilada is one of my favorite dishes. This rich and creamy chicken enchiladas recipe is a traditional Mexican food staple. It’s super-simple to make. Tender pieces of shredded chicken, creamy pinto beans and sweet corns are rolled in tortillas and topped with sweet and spicy enchilada sauce, and then it is baked until the cheese is nicely melted. It’s a meal that can be prepped ahead of time. It’s perfect for lunch or easy and quick weeknight’s dinner.

INGREDIENTS:
– 1 large white onion
– 1 red bell pepper
– 3-5 garlic cloves
– 1.5 pound boneless skinless chicken (I recommend using chicken tenderloins for this recipe)
– 28 oz mild green Chile enchilada sauce (Las Palmas, La Victoria)
– 15.5 oz pinto beans or black beans
– 1 can yellow corn
– 8-10 flour tortillas
– 1/2 cup Colby& Monterey Jack cheese
– 1/2 cup mozzarella cheese
– Salt
– Pepper
– Chipotle chili pepper
– Sweet paprika
– Italian herbs
– Fresh cilantro
– Fresh parsley
For the garnish:
– Avocados
– Sour cream
– Salsa
