Chicken breast with courgettes and cherry tomato dressing is a quick lunch option. Takes around 15-20 minutes, and it is so easy to make. That very simple dish will surprise you with its mixture of flavours.
To prepare the dish you will need:
• chicken breast,
• courgettes,
• broccoli,
• cherry tomatoes,
• chives
• lemon,
• basil,
• olive oil,
• salt & pepper,
• paprika flakes,
• garlic,
• thyme.
Start with cooking a few pieces of broccoli. Meantime prepare chicken breast – flatten, and seasoned with salt and pepper. Grill chicken breast at the same time as thickly sliced courgettes, add some garlic and thyme for more flavour. For the dressing cut cherry tomatoes in half, add chives, olive oil, salt, pepper and paprika flakes, and mix all together. Finish dish with a few basil leaves. Enjoy!
