Today I am making one of my favorite Mexican dish that is chicken avocado burritos. They are so juicy and flavorful. It has an amazing and unique taste and that creamy cilantro avocado sauce just gives it more depth of flavor, you are going to love this recipe!

It’s a must try and it will become a new family favorite in no time.

Ingredients;

For sauce:

1 avocado,
1/2 bunch of fresh cilantro,
1 cup sour cream,
3 garlic cloves,
2 tbsp olive oil,
2 tbsp fresh lemon juice,
1/4 tsp salt,
1/4 tsp black pepper powder,
1 tbsp white vinegar,

For chicken filling;

3 tbsp oil,
500 g boneless chicken (diced) – saute it for 5 to 7 minutes then add
1 tbsp garlic (chopped),
1 small onion (chopped) – saute for more 5 minutes then add
1 tsp black pepper powder,
1 tsp salt,
1 tsp smoked paprika,
1 tsp cumin powder,
1/2 tsp red chilli powder,
add splash of water and mix,
1 chopped jalapeno,
1/2 cup crushed pineapples,
2 tbsp lemon juice,
mix well for 3 minutes and turn off the flame

For assembling:

4 large tortillas,
1 diced avocado
prepared sauce,
1/2 shredded mozzarella cheese

Method:

1. First prepared the sauce with the ingredients mention above and give them blend until smooth.

2. Now in a hot pan, add oil along with chicken and saute it for 5 to 7 minutes then add chopped garlic and onion and saute for more 5 minutes.

3. At this point add all the spices, water and mix for 2 minutes then add crushed pineapple and saute for 2 minutes, now turn off the flame and keep it aside.

4. Now for assembling, place a single tortilla, pour some sauce then add generous amount of chicken filling along with more diced avocado and cheese then wrap it tightly and make all the burritos like that.

5. Now in a medium hot fry pan, dry roast the prepared burritos from all sides until slightly golden brown and slightly crunchy and serve hot and enjoy.
