Ingredients:
-2 onions
-2 chicken breasts
-A handful of coriander
-5 cloves of garlic
-A thumb sized bit of ginger
-A green and red pepper
-2 bay leaves
-2 cinnamon sticks
-2 cardamom pods
-A teaspoon of paprika
-Tablespoon of mixed curry powder
-A teaspoon of garam masala
-A tablespoon of salt
Mixed curry powder contains equal parts:
-Turmeric
-Daniya (coriander powder)
-Jeera (cumin powder)
-Paprika
-Chilli powder
Instructions:
1. Heat up the pan and add 3 tablespoons of oil.
2. When it’s heated up add bay leaves, cinnamon sticks and cardamom pods. Also add garlic and ginger and stir until brown.
3. Add onions and salt then cook for 15 minutes, stirring occasionally.
4. Add spices and stir and leave on a low heat for 5 minutes. I f needed, add a few tablespoons of water.
5. Add chicken and stir and leave to cook for 15 minutes, stirring occasionally.
6. Add pepper and stir and leave on a low heat for 10 minutes. Then add 150ml of hot water and stir.
7. Add chopped coriander before serving.
