Persian or Iranian cuisine is one of the oldest in the world.
Kabob Koobideh (کباب کوبیده) is made with ground lamb or beef or a combination of the two. This is one of the most popular kabobs you can find on the streets of Iran. This Kabob is usually grilled over hot coals
I am sharing with you the recipe of this Persian rice, or at least the recipe for chelo rice that accompany his koobideh. Chelo rice is a simple rice without additional ingredients like herbs, barberries, or beans,
Chelo kabab literally means “white rice with kebab”. This ground beef version of kebab with onions and saffron is called koobideh.
Ingredients
Ground beef with fats 80-20 2kg
Onions 6 medium size finely chopped. Squeeze the water and save the water
Garlic 2 cloves
Saffron leaves 1/4 tsp
Salt to taste
Black pepper 2 tbsp
Sumak ( I used paprika ) 2 tbsp
Baking soda 1/8 tsp
Method
2. Dilute saffron in 1/4 cup of boiling water, cover and infuse for 10 minutes.
3. Marinate the ground beef in three layers. First layer the 1/3 of the ground beef, then add 1/3 of the chopped onions. Then add salt, pepper and paprika. Be careful, salt pepper and paprika will be added in layers. So don’t add all at once
4. Now repeat this process twice. Layer remaining minced meat , chopped onions salt pepper and paprika.
6. Finish with the infused saffron water and mix well again.
7. Mix minced meat like kneading it. Knead it for ATLEAST 15-20 mins. After kneading well, marinated meat will be like sticky.
9. Place in a covered container in the fridge for at least 4 hours.
10. Make koobideh kebabs by pressing the meat well to barbecue skewers.
11. Pinch the meat with your finger regularly throughout the skewer every inch to give its characteristic shape.
13. Grill the skewers on a BBQ by placing them over the coals or flame of bbq grill. Turn them regularly to ensure a perfectly even grilling for approximately 15 minutes.
14. Place the tomatoes and onions on the BBQ and turn regularly. They are served as an accompaniment to the skewers.
Serve them with bread or Persian steam rice infused with saffron. Also Turkish pickle is served with these kebabs.
