Cheesy Taco Casserole Recipe – Quick and Easy Dinner

Ingredients:

To make this mouth-watering taco casserole, you will need:

– 1 or 2 lbs. ground beef
– 1 tsp Paprika
– 1 tsp Garlic Powder (or 2 cloves of garlic, minced)
– 1 bag of Nacho Cheese Doritos (crushed)
– 1 packet of taco seasoning
– 1 can of black beans, rinsed and drained (optional)
– 1/2 bag of frozen corn
– 2 cans Rotel Tomatoes
– 1 cup of sour cream
– 2 cups of shredded cheddar cheese (I prefer a Mexican cheese blend)

Directions:

1. In a large skillet, cook the ground beef until browned and crumbly. Season with paprika and garlic as it is browning.

2. Place the crushed chips in the bottom of the slow cooker and even them out.

3. Add the ground meat and spread it out evenly over the chips.

4. Sprinkle half of the taco seasoning over the beef mixture in an even layer.

5. Sprinkle half of the shredded cheese evenly.

6. Add the corn and even that layer over the seasoning.

7. Add the black beans and even them out if using.

8. Spread the Rotel tomatoes evenly over the corn/beans.

9. Spread the sour cream over the tomatoes.

10. Sprinkle the remaining shredded cheddar cheese on top of the sour cream.

11. Set the slow cooker to high and cook for 2 hours.

12. Garnish with some fresh cilantro leaves (optional) and serve hot with some extra tortilla chips on the side.

And there you have it, a delicious and easy-to-prepare Taco Casserole! This dish is perfect for busy weeknights when you don’t have a lot of time to spend in the kitchen.
