Hi lovies, today I am sharing with you what i eat in a day on a vegan ayurvedic diet specific for vata dosha. Scroll down for the easy and healthy recipes and for more resources on ayurveda. 🦋

⌜ Recipes ⌝

BREAKFAST: stewed plums and dates with porridge
– chop up 2 plums and add to a sauce pan with 2 tbsp of water, 1/4 tsp cinnamon, 1/5 tsp ginger, 1/6 tsp cardamon, a few drops of vanilla extract and 1 tsp agave syrup
– once the plums are soft, add 1/2 cup of oats with 1 cup water and 1 medjool date (chopped)
– once oats are fully cooked, add a splash of vegan milk and stir. Serve warm 🙂

LUNCH: kitchari with baba ganoush
Baba Ganoush:
– 2 eggplants, cut in half, drizzle with olive oil and grill in the oven on 180 celsius until the inside of the eggplant is soft (takes around 30ish minutes)
– once eggplants are done, let cool then scoop out flesh and add to blender with 1/3 cup tahini, 2 big cloves of garlic (I used 4 tiny ones), 1 tsp salt, 1 tsp smoked paprika, 1/3 tsp cumin and the juice of 1 lime.
– Blend until desired consistency.
Kitchari:
– start by cutting your veggies (I used 10 mushrooms and 1/2 head of broccoli)
– add veggies to a pan with 1 tbsp of coconut oil and 1 tsp mustard seeds, cook until mushrooms reduce in size
– add the spices (1 tsp turmeric, 1/2 tsp coriander, 1/2 tsp cumin, dash of hing powder, 1/2 tsp ginger and salt + pepper to taste) and cook for another minute
– rinse 1/2 cup of rice and 1/2 cup of red split lentils until the water runs clear. then add to the pan with the veggies along with 3 cups of water
– cook until all the water is absorbed.
Serve with a few tablespoons of baba ganoush and squeeze of 1/2 lime.

DINNER: Roasted red bell pepper soup
– cut 3 red bell peppers into smaller pieces and drizzle with olive oil. Add sea salt, garlic powder, basil and oregano seasoning. Place in the oven on the grill for about 25-30 minutes (on 180 celsius)
– cut 1 large potato in cubes and add to a pan with 3 cups of water and 2 tbsp of veggie stock powder
– rinse 1/2 cup of red split lentils until the water runs clear and then add to the pan with potatoes.
– cook the lentils and potatoes until they are soft.
– transfer the lentils+potatoes and cooking water to a blender along with the roasted peppers, add 1 tsp of smoked paprika
– now blend everything on high until well-blended.
