FULL RECIPE:
2 tbs of olive oil
One medium onion, diced
1 and 1/2 tsp of minced garlic
1 tsp of ground cumin
1 tsp of sweet paprika
1/8 tsp of ground cayenne
3/4 tsp of kosher salt
1/4 tsp of black pepper
One 28-ounce can of fire roasted tomatoes, crushed
1/2 cup of roasted red peppers
5 large eggs
5 ounces of crumbled feta
Fresh cilantro
A.R.’s Hot Southern Honey
Heat 2 tbs of olive oil in a large skillet over medium heat.
Then add your diced onions. Sweat onions for 3 minutes or until translucent.
Add 1 and 1/2 tsp of minced garlic and saute for one minute.
Pour in one 28 ounce can of crushed fire roasted tomatoes. Bring to a simmer and then add 1/2 cup of roasted red peppers, 1 tsp of ground cumin, 1 tsp of sweet paprika, 1/8 tsp of ground cayenne, 3/4 tsp of kosher salt and 1/4 tsp of black pepper.
Bring to a boil and then lower the heat and simmer for about twenty minutes.
After the sauce has thickened, make 5 divots using a spoon and add your eggs. Lower the heat and cover. Let everything simmer for 5 to 10 minutes or until the whites of the eggs are almost completely cooked. The eggs will continue cooking after we remove the pan as the pan will still be hot.
Remove the pan from the stove and then add your feta cheese.
Garnish with fresh cilantro and add a drizzle of A.R.’s Hot Southern Honey. If you cannot find A.R.’s then any honey will do. You can also add your favorite hot sauce for added heat and flavor.
Serve with texas toast or garlic bread.
