Game Day Recipe!
Cauliflower stuffed Twice-Baked Potatoes
6 baking potatoes
5-slices bacon
1 10 oz bag cauliflower florets (you could do fresh or frozen)
1/2 Cup shredded cheddar cheese
1/2 Cup shredded Colby jack cheese
1/4 Cup sour cream
1 T. Olive oil
3 T. Butter
1/2 tsp. Salt
1/4 tsp. garlic powder
1/4 tsp. Smoked Paprika
Fresh ground black pepper
Fresh sliced green onions for topping
Wash potatoes really well. Poke holes in them with a fork. Rub outside with oil. Bake at 400 for 1 hour. Let cool. Fry the bacon. Crumble and set aside. Boil cauliflower until tender. Blend in food processor with 1 T. Olive oil until smooth. Cut potatoes lengthwise. Scoop out insides in separate bowl. Half the potatoes you scooped out and save half of them for mashed potatoes later. Add butter into hot potatoes and mix. Then add cauliflower. Mix. Add sour cream. Mix. Add cheese and other spices. Mix until smooth. Re-stuff potatoes with mixture. Top with cheese. Bake in oven until cheese is hot and bubbly. Remove from oven. Top with bacon, green onion, sour cream. Enjoy!
