Cauliflower “Mac” n Cheese

This will change your life! For those trying to cut down on carbs, this is the dish you didn’t know you needed. And with the holidays around the corner, this is one you can make and share with your carb loving family too!

RECIPE (adapted by Low Carb and Lovin’ It)

Ingredients:
*1 large head cauliflower, cut into small florets
*1 cup heavy cream
*2 ounces cream cheese
*1 1/2 teaspoons Dijon mustard
*1 1/2 cups shredded sharp Cheddar, plus 1/2 cup for topping the casserole
*2 ounces fresh Parmesan cheese
*1/4 -1/2 teaspoon sea salt
*1/4 -1/2 teaspoon garlic powder
*1/4 -1/2 teaspoon smoked paprika
* fresh ground black pepper
*1-2 tbs olive oil
*cooking oil spray

Directions:
1. Roast cauliflower
– in oven: coat cauliflower with olive oil, spread in single layer on greased baking sheet and roast at 400 degrees for 20-25 minutes turning half through.
– in airfryer: coat cauliflower with olive oil, place in basket, and airfryer at 400 for 12-15 minutes.
2. Heat or lower oven temp heat to 375 degrees.
3. Spray an 8×8 baking dish with cooking oil spray.
4.Transfer the cauliflower to the baking dish and set aside.
5. Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Lower heat and stir in 1 1/2 cup of the cheddar cheese, and the Parmesan cheese. Stir until cheese is melted.
6. Add in your seasonings (salt, pepper, paprika and garlic) and adjust as needed.
7. Remove sauce from heat, pour over the cauliflower, and stir to combine. Top with the remaining 1/2 cup cheddar cheese.
8. Bake until cheese is melted and bubbly hot, about 15 minutes. Set oven to low broil and broil another 2-3 minutes until browned and crisp.
9. Let sit for 5-10 minutes and serve.
