Cannellini Bean Soup
▪️½ tbsp oil
▪️1 onion, finely chopped
▪️1 stick celery, finely chopped
▪️2 cloves garlic, finely chopped
▪️1 carrot, finely chopped
▪️1 large potato, cubed
▪️2 tins cannellini beans, drained
▪️4 large chard leaves or a handful fresh spinach, chopped
▪️60g pearl barley
▪️1 litre veg stock
▪️2 tbsp tomato puree
▪️1 tsp paprika
▪️1 tsp dried thyme
▪️small sprig rosemary, chopped
▪️100ml double cream
▪️ Salt & Black pepper to season
Heat the oil and cook the onion, celery and garlic for a few minutes. Add the carrot, potato and beans, mix well and cook for a few more minutes.
Stir in the stock, pearl barley and chard or spinach. Add the tomato puree, paprika, thyme, rosemary. Cook for 15 to 20 minutes on a medium heat until the veg is soft. Season to taste and stir through the cream.
Serve with crusty bread.
