Barbeque nation style cajun potato | cajun spice potato | काजुन पोटैटो | cajun roasted potatoes

👉A lip smacking potato snack served with a hot and tangy ‘Cajun sauce’. If you have ever gone to barbeque nation then you must have tasted cajun spiced potatoes. It is their signature recipe and taste absolutely delicious. But I have made the cajun sauce with readily available ingredients and you will be surprised once you try to cook this at your kitchen.

Ingredients for 6 servings:-
for pressure cooking:
• 12-13 baby potato
• ½ tsp salt
• water for cooking

for Slurry:
• ¼ cup corn flour
• ¼ cup maida / plain flour
• ¼ tsp paprika
• ¼ tsp black pepper powder
• ½ tsp salt
• ½ cup water
• oil for frying

for cajun sauce:
• 1 cup milk
• 2 tsp fresh cream
• 2 tsp corn flour
• ¼ cup water
• ½ tsp chilli flakes
• ½ tsp oregano
• 1 tsp onion & garlic paste
• ½ tsp paprika / chilli powder
• ½ tsp black pepper powder
• ½ tsp salt
• 2 tsp tomato sauce

other ingredients to Garnish:
• 1 tsp onion finely chopped
• 1 tsp dried fenugreek leaves
• 1 tsp basil leaves
• Pinch of paprika

Preparation method:-

1) For Cajun Sauce-: Add 1 cup milk in a pan & 2 tsp fresh cream and allow it to boil.
2)  In a bowl add 2 teaspoon of corn flour and make a paste by adding some water. Add this paste to boiled milk & stir well. After sometime the mixture will start thicken.
3) Add chilli flakes, oregano, black pepper powder, paprika, onion & garlic paste, salt and tomato sauce. Then cook well until you get a smooth consistency.
Cajun sauce is ready. Keep it aside

4) In a cooker take baby potatoes , add water and ½ tsp salt. Pressure cook for 2 whistles or until potatoes is 90% cooked.
5) Remove the potatoes, press and flatten slightly. keep aside.

6) For slurry-: in a small bowl take corn flour, maida, paprika, black pepper powder and salt.
Add ½ cup water and mix well forming a smooth lump-free batter. Now dip the boiled potato into slurry coating uniformly.
7) Shallow fry the potatoes on medium flame.
Fry both the sides until the potatoes turn golden brown and crisp. Keep them aside
8) To serve, in a plate place fried potato leaving some gap in between.
9) Pour a generous amount of hot cajun sauce over it. Sprinkle, paprika, onion, Fenugreek leaves & basil leaves.
10) Finally, cajun potato is ready to serve.
