Hi Friends!
We’re very excited to post another cooking video because cooking is one of our favorite things to do both together and alone. This video is a very special one because it features a chicken recipe that is highly requested and loved by all! We call it Auntie Sarah’s Chicken because Beatrice says that one day her future kids will always be asking for her to make “Auntie Sarah’s Chicken.” Almost everyone who has tried this cajun chicken and rice dish has asked for the recipe, and it is so simple and easy to make. It is a perfect dish to make for dinner parties, meal prep, date night, or basically just any night. All it really requires is some chicken thighs, spices, and about 1 hour of your time.
FULL RECIPE
1. Preheat oven to 400-425 F, depending on your oven
2. Wash and dry chicken thighs thoroughly
3. Season with the following spices on both sides:
— Tony Chachere’s Creole Seasoning
— Smoked Paprika
— Garlic Powder or Granulated Garlic
— Black Pepper
— Cayenne Pepper (optional)
— Oregano
4. Add in frozen artichokes or other veggies of your choice (I also like it with yellow onions, carrots, and cherry tomatoes). Peel 1 head of garlic and add to pan.
5. Drizzle veggies with olive oil, season with salt and pepper
6. Bake for 40-50 minutes. If you want the skin extra crispy, turn on the broiler for the last 3-5 minutes.
7. Remove chicken from pan. Add rice or grain of your choice (also delicious with quinoa) to the pan and combine with juices remaining in the pan. Add cilantro or other herb, tomatoes, and lemon juice.
8. Add the chicken back in the pan and serve!
