Hi everyone, welcome back to my channel! I love rice, but whenever I want a low calorie alternative, I go for bulgar wheat! This bulgar wheat recipe with prawns a tomatoes is easy and quick to make, it’ll take you around half and hour to make. Try it, and let me know what you think!

Ingredients

1 and half cups of bulgar wheat
300g King prawns (or protein of your choice)
3 tomatoes, diced with watery part removed
3 stalks of spring onion
4 cloves of garlic
Chilli (I used a half a scotch bonnet, but please uses chilli flakes if you don’t like spice!)
1 tablespoon of tomato puree
1 chicken stock cube
1 and a half teaspoons of smoked paprika
Garlic salt/salt
Pepper
Parsley (optional for garnish)

1) Season the prawns with a teaspoon each of salt and pepper, and a teaspoon and a half of smoked paprika

2) Heat some oil in a pan, add the garlic. After around 30 second, add the prawns and cook through. Do not overcook them!

3) Add your chilli and a tablespoon of tomato puree, cook off for a minute or so, add the white spring onions

4) Add 1 and a half cups bulgar wheat, stir into the tomato puree mix. Add 2 cups of boiling water, a chicken stock cube and stir

5) Bring the pan to a boil, then lower to a medium heat and let it simmer for 10 minutes, or until the water has largely been absorbed into the bulgar

6) Cover the pan, and let it steam for 10 minutes. Fluff up the bulgar and let it steam for a further 2-5 minutes

7) Add the diced tomatoes, prawns, the rest of your spring onions and stir

8) Garnish with fresh parsley and enjoy!
