Hearty, rich and creamy soup loaded with broccoli cheesy goodness. Best comfort food that can be made under 30 minutes in the Instant Pot!!
Ingredients
Broccoli – 3 cups (1 large head)
Carrot – 1/2 cup (1 large)
Cheddar cheese – 2 cups (8 oz)
Butter – 2 tbsps
Onion – 1 medium
Garlic – 2-3 cloves minced
All purpose flour – 1 1/2 tbsp
Salt – 1/2 tsp
Pepper – 1/2 tsp
Nutmeg – 1/4 tsp (Optional)
Paprika – 1/4 tsp (Optional)
Vegetable or Chicken stock – 2 cups
Instructions
1. Turn on Instant pot sauté mode and add 2 tbsps of butter.
2. Add one chopped onions and 2-3 cloves of minced garlic. Sauté them till the onions turn translucent.
3. Turn off sauté mode and add 1 1/2 tbsps of all purpose flour. Sauté it well.
4. Add 2 cups of Vegetable or Chicken stock and deglaze the pot.
5. Add 3 cups of broccoli florets, 1/2 cup of carrots grated or chopped, salt, pepper, nutmeg and paprika.
6. Close the lid and set the pressure valve to Sealing. Cook on the Pressure cook (Manual) mode for 1 minute.
7. Naturally release pressure for 5 minutes and then release pressure manually.
8. Turn on Instant Pot sauté mode and add 2 cups of Milk.
9. Add one cup of Cheddar cheese, mix it and then add another cup, mix well.
10. Turn off the sauté mode and serve the soup warm with any bread of your choice.
