Brisket Smoked On The Hunsaker Vortex Drum Smoker

When it’s time to give a new smoker a test run, I usually like to do ribs. Not this time. To put the Vortex Drum Smoker from Hunsaker Smokers through its paces I give a 15 pound Brisket a good coating of my Coffee Cocoa Rub, add some hickory wood to the smoker, and let the magic happen.

Coffee Cocoa Rub Ingredients

1 cup Brown Sugar
¼ cup Ground Coffee
¼ cup Unsweetened Cocoa Powder
3 TBSP Kosher Salt
3 TBSP Coarsely Ground Black Pepper
1 TBSP Smoked Paprika
1 TBSP Chili Powder
