BECKY’S DUTCH OVEN CHILI
Ingredients:
Ground beef (brown about 2 lbs, drain, and measure–see note below for amounts)
2 (15.5 oz) cans beans, drained and rinsed (your choice of kidney and/or black beans) to yield 18 oz beans
1 (28 oz) or 2 (14 oz) cans diced tomatoes (preferably fire-roasted)
1 (12 oz) bag frozen red peppers (preferably fire-roasted)
1 (12 oz) bag frozen poblanos or other pepper (preferably fire-roasted, you can also use 1-2 fresh poblanos)
2 medium onions, chopped
3 Tbsp chili powder
2 Tbsp cumin
1 Tbsp oregano
1 Tbsp smoked paprika
2 Tbsp sea salt
4 Tbsp minced garlic (8 cloves)
Directions:
1. Add your weighed beef and beans to the Dutch oven (or large pot).
2. Add the tomatoes to a large bowl on your digital scale. Add peppers and onions until the weight totals 48 ounces. Add the vegetables to the pot and stir to combine.
3. Combine the spices in a small bowl. Add garlic and spice blend to the pot. Stir to combine.
3. Cover and simmer on low for at least 1 hour. Remove lid, simmer for about 30 minutes or until reduced to desired consistency.
Note:
If you will be serving only women’s portions, use 12 oz beef.
If you will be serving only men’s portions, use 18 oz beef.
If you will be serving both men’s and women’s portions, use the average of these two amounts, which is 15 oz beef.
Yield:
This recipe will yield about 6 servings. Enjoy a 13 oz bowl for women’s portions or a 14 oz bowl for men’s portions. This counts as 1 protein, 6 oz veggies, and 2 oz tomatoes for a condiment. Have this for lunch with a fat and a fruit, or for dinner with a fat and a salad. Some fats that pair well are 2 oz of avocado sliced on top or 1 oz cheddar cheese sprinkled on top.
