Brazilian Stroganoff recipe: How to make chicken stroganoff, via Brazil

My best friend from college, Lara, has been living in Brazil for the past 2 years. She just came back to America and visited me in NYC. Of the many experiences she had in Brazil, learning about incredible Brazilian dishes was one of them!

And lucky for me, she taught me how to make her favorite: stroganoff!

Stroganoff is originally a dish from Russia, but it’s also a popular dish in Brazil, where the Brazilians have made it their own. She said there are many variations of this dish, and she taught me the way she learned it:

-2 lbs. chicken, cut into 1 inch cubes
-salt, pepper and nutmeg, to marinate the chicken
-1/2 lb. white mushrooms, sliced
-2-3 Tbsp. tomato paste
-1 Tbsp. mustard
-1 large white onion, chopped
-1/2 c. heavy cream
-1/2 c. black olives
-2 garlic cloves, minced
-1/2 c. dry white wine

Sauté the garlic and onion in a large pan. Add the chicken. Separately, sauté the mushrooms. When the chicken is about cooked, add the sautéd mushrooms to the chicken. Then, add the olives, white wine, mustard and tomato paste. Let the sauce simmer and thicken for about 10 minutes. Then add the heavy cream. Add salt and pepper to taste, and it’s done!

We served it on top of rice, and had a side salad. It was just lovely!

A few additional notes about the ingredients:

Traditionally, Brazilians use creme di leche rather than heavy cream…but if it’s not available near you, you can use heavy cream or sour cream, or yogurt.

The mustard should be kind of mild; we used dijon.

You can use either beef or chicken in this recipe!
