Bountiful Bagel Sandwich
Ingredients
For Sandwich:
2 Bagels – any variety of your choice. I chose everything bagel
Vegetable slices like eggplant, peppers, green tomatoes, zucchini- grilled Olive oil about 1-2 tablespoons
Cream cheese about 2-3 tablespoons
Sun dried tomatoes – 1 tablespoon
Spices – paprika, salt, zaatar seasoning, garlic powder, salt and pepper to taste
Cheese slices of your choice (optional)
How to assemble:
-First mix all the spices and rub to vegetable slices along with some olive oil
-Grease the grill and grill the vegetables on medium high heat until done. Try to keep them crunchy and not overcook. Set them aside.
-Slice the bagel into 2 halves and toast it for a minute Mix sun dried tomatoes with cream cheese and spread it on the bagel halves
-Start putting grilled vegetables on it one by one.
-Then top with cheese slice.
-Cover it up with second half of the sliced bagel and sandwich is ready.
Herb and nectarine salad
-1 cup each of cherry tomatoes, nectarines or peaches and cucumbers
-Dice then all into cubes
-For the dressing : mix 2 tablespoons chopped coriander or parsley leaves, 1 tablespoon basil leaves, 1 tablespoon mint leaves, 1 tsp dried oregano, 1/4 cup olive oil, 1 tablespoon lemon juice, 1 big garlic clove or 2 small ones, 1 green or red chilli ( can be replaced with some chilli flakes), salt and pepper to taste.
-Put all the dressing ingredients in chopper and just give 2-4 pulses to mix it all.
-Then pour it over the diced salad as needed and mix.
-Serve fresh
