Ingredients for marinade
Chicken breast 1kg (fillet)
Fish sauce 2 tbsp
Calamansi or lemon juice 2 tbsp
Salt 1 tbsp
Ground Black pepper 1 tbsp
Breading mix:
All purpose flour 2 cups
Cornstarch 1 cup
Onion powder 1 tbsp
Garlic powder 1 tbsp
Paprika 1 tsp
Ground black pepper 1 tbsp
3 whole egg for batter
Procedure:
*Season the chicken with all ingredients for marinade and marinate it for 1-2 hours or overnight for best result.
* On a mixing bowl combine all ingredients for breading and mix it well
* In another bowl crack 3 eggs then beat.
* Do the dry, wet and dry method to coat the chicken
* Deep fry until become crispy and golden brown.
Gravy
Ingredients:
1/4 cup of butter
3/4 cup of all purpose flour
1 pc beef broth cubes dilluted in 800 ml hot water (as beef stock)
Salt and pepper to taste
Procedure:
* Preheat a sauce pan over medium high heat setting then add butter until melt.
* Put all purpose flour, continue mixing the roux.
* Add beef stock, until totally disolve the roux and get the consistency you want..
* Salt and pepper to taste.
