Tortillas (I prefer multi-grain but made do with what I had in this video)
Cooked hashbrowns or diced potatoes
Vegan cheese
Tostadas

For the tofu scramble: Scramble the following until preferred consistency.

1 block soft/medium tofu (used firm in this but I PREFER the others for tofu scrambles)
1 tsp each onion powder & garlic powder & black salt
1/2 tsp paprika
1/4 tsp turmeric
Pinch of pepper

For the Breakfast Beans: SMASH this all together!

1 can pinto beans (rinsed and drained)
1 tsp sage
1/2 tsp sea salt
1/4 tsp black pepper
1/8 tsp marjoram
Pinch of ground cloves & red chili flakes

For the maple sour cream: Whisk it, whisk it real good!

1/2 cup vegan sour cream
2 tbsp maple syrup

1. Prepare ALL.OF.THE.ABOVE and then assemble and fry as shown in the video! ENJOY with a side of maple sour cream & salsa…or one or the other…or however you like!!!
