This vegan chili is quick and easy to make and tastes delicious! You only need 1 pot!
It is the perfect hearty meal for cold weather 😀
Packed with protein and spices, it will fill you up and keep you satisfied.
It is also great for meal prep because it can last for up to a week in the fridge or longer in the freezer.
Ingredients (makes 4-6 servings)
– 1 bell pepper diced
– 1 sweet potato diced
– 4 cloves garlic diced
– 28 oz diced tomatoes (canned or fresh)
– 1 tbsp tomato paste
– 16 oz black beans (can)
– 16 oz pinto beans (can)
– 12 oz soyrizo
– 2 tbsp olive oil
– 1 tsp cumin
– 1 tsp paprika
– 1/2 tsp cayenne pepper
– 1/2 tsp cinnamon
– 1 bay leaf
– Black pepper and salt, to taste
Optional, for serving:
– Rice or quinoa
– Avocado, sliced
– Vegan cheese, shredded or crumbled
– Cilantro leaves (for garnish)
