Ingredients
Salmon
1 ½ lb. fresh salmon
3 Tbsp olive oil
2 tsp lemon juice
1 tsp salt
1 black pepper
1 Tbsp cumin
1 Tbsp paprika
½ cup fresh parsley
2 cloves of garlic
3 Tbsp water
Instructions
1. Preheat the oven to 400°F.
2. In a food processor blend parsley, garlic and olive oil.
3. In a small bowl add parsley and garlic mixture, paprika, cumin, salt, pepper, lemon juice, and olive oil.
4. Marinate salmon with the mixture, and bake for 35 minutes.
Mango Salsa
1 fresh mango
1 tomato
½ red onion
½ cup cilantro
1 tsp salt
½ tsp salt
1 Tbsp olive oil
½ tsp lime juice
Instructions
1. Peel and dice the mango and add to a small bowl.
2. Add tomato, onion, parsley, salt, pepper, olive oil, and lime juice to bowl with mango.
3. Mix to combine.
