INGREDIENTS
3 lbs beef chuck boneless, cut into 1-inch pieces
3 tbsp all-purpose flour
½ tsp salt or to taste
½ tsp pepper or to taste
3 tbsp olive oil
1 large onion roughly chopped
2 stalks celery cut into 1-inch pieces
2 large carrots peeled and cut into 1-inch pieces on the diagonal
3 cloves garlic minced
3 tbsp tomato paste
1 tsp sugar
4 cups beef broth low sodium
1 tbsp Worcestershire sauce
2 cups red wine such as Merlot or Cabernet Sauvignon
2 bay leaves
3 sprigs fresh thyme
1 lb potatoes peeled and cut into 1-inch cubes
¼ cup fresh parsley chopped, for garnish
