Saturday night snack time covered!! Beef, cheese, and pumpkin empanadas 😋⁠⠀

These came out great, I used a Laylita.com recipe for the dough which was super easy! I made my own recipe up for the filling. My only small regret with this, only because were doing 31 days of pumpkin, was that the pumpkin wasn’t really the star of the filling but the combo of the filling was amazing regardless. ⁠⠀

These empanadas are filled with pumpkin, ground beef, scallion, garlic, corn, cheese, cumin, coriander, paprika, nutmeg, adobo, and salt. So delicious! I ate them with some fresh cilantro and Valentina hot sauce 🎃⁠⠀
