BBQ Smoked Pork Butt and Chicken Weber Smokey Mountain How To With Thermo Pro TP-20

I was gifted a Weber Smokey Mountain 18″ WSM and had to try it out. This video shows our first time smoking a pork butt and whole chicken using the minion method. We used hickory and Apple wood and Weber original briquettes. Below is my signature Sweet Heat BBQ Rub recipe.

Sweet Heat BBQ Rub
1/4 Cup Brown Sugar
1/4 Cup Granulated Sugar
1 Tbsp Kosher Salt
2 tsp Black Pepper
1 1/2 tsp Smoked Paprika
1 1/2 tsp Granulated Garlic
1 tsp Granulated Onion
1 tsp Ancho Chili Powder
1 tsp Chili Powder
1 tsp Cumin
1/2 tsp Crushed Red Pepper
1/4 tsp Cayenne Pepper

For the Pork Butt i rubbed it down with a mustard then topped liberally with the BBQ Sweet Heat Rub mentioned above.

For the Chicken i used the same rub minus the sugar and brown sugar.
